  • 100 g of melted butter
  • 2 tablespoons of sugar (optional)

For the filling:

  • 500 g cream cheese (at room temperature)
  • 150 g of sugar
  • 3 eggs
  • 200 ml of strong coffee (you can use espresso or brewed coffee)
  • 1 teaspoon vanilla extract
  • 1 teaspoon powdered gelatin (optional, for extra firmness)
  • 2 tablespoons of hot water (if using gelatin)

For the topping:

  • 200 ml of whipping cream
  • 2 tablespoons of powdered sugar
  • Cocoa powder or roasted coffee beans (for garnish)

Instructions for making a Coffee Cheesecake

1. Prepare the base:

  • Preheat oven to 180°C (350°F).
  • Grind the cookies in a food processor until finely ground. If you don't have one, you can place them in a bag and crush them with a rolling pin.
  • Mix the crushed cookies with the melted butter and sugar (if desired) until you get a homogeneous mixture.
  • Press the cookie mixture firmly into the bottom of a springform pan (approximately 9 inches in diameter). Make sure it's evenly packed.
  • Bake the base for 10 minutes and then let it cool.

2. Prepare the filling:

  • In a large bowl, beat the cream cheese with an electric mixer until smooth and creamy.
  • Add the sugar and continue beating until fully combined.
  • Add the eggs, one at a time, making sure to mix well after each addition.
  • Dissolve the gelatin in the hot water (if using) and add it to the cream cheese mixture. You can also skip this step if you prefer a creamier, less firm cheesecake.
  • Add the coffee and vanilla extract, and mix until all ingredients are well combined.

3. Bake the cheesecake:

  • Pour the filling mixture over the cooled biscuit base.
  • Bake the cheesecake in a double boiler in the preheated oven for 50-60 minutes or until the center is almost firm but slightly jiggly.
  • Turn off the oven and leave the cheesecake inside with the door ajar for 1 hour to cool gradually and prevent cracking.
  • Next, remove the cheesecake from the oven and let it cool to room temperature before refrigerating it for at least 4 hours, preferably overnight.

4. Prepare the topping:

  • Before serving, beat the whipping cream with the powdered sugar until soft peaks form.
  • Spread the whipped cream over the top of the cooled cheesecake.
  • Decorate with cocoa powder or roasted coffee beans.

Tips and Variations

  • If you prefer a milder flavor, you can use decaffeinated coffee or substitute it with coffee-flavored milk.
  • For an extra touch, you can add chocolate chips, chopped nuts, or dark chocolate chunks to the cheesecake mixture.
  • Use gluten-free crackers for the crust and make sure the cream cheese is gluten-free.
  • For a coffee and chocolate cheesecake, mix a little cocoa powder into the cream cheese mixture or add melted chocolate.
  • To enjoy an iced coffee cheesecake, blend the cheesecake mix and place it in the freezer for several hours, making sure to stir every 30 minutes to prevent ice crystals from forming.
