  • 1.5 oz of Stolen Smoked Rum

  • 0.75 oz of cold brew Barista Parlor Colombia El Cascabel

  • 0.25 oz Demerara syrup with lemon

  • 0.5 oz of Bodegas Yuste Aurora Oloroso sherry

  • 0.25 oz Carpano Antica Formula sweet vermouth

  • drops of Angostura bitters

Rinse a glass with Stolen Jamaican Overproof Rum. Mix the ingredients in a mixing glass. Lightly rinse the glass and pour the mixture. Garnish with a cranberry infused with the cocktail and covered with Trinidadian chocolate.

Mr. Bali Hai Rum Coffee Cocktail

  • 1 oz of Black Strap rum

  • 1 oz of Madeira wine

  • 1 oz lemon juice

  • 1 oz of pineapple juice

  • 1 oz of coffee liqueur

  • ¼ oz spiced rum

  • ¼ oz Jamaican dark rum

  • ¼ oz of Falernum

  • 3 drops of tiki bitters

  • Crushed ice

  • To decorate: a slice of pineapple, pineapple leaves and coffee beans

In a cocktail shaker, add all ingredients except garnishes and shake well until chilled. Pour into a tiki glass and garnish with the pineapple slice, leaves, and coffee beans. Serve immediately.

Coffee Cocktail with Coffee Grog Rum

  • 1 sugar cube

  • 1 tsp Don's Coffee Grog Batter

  • Pinch of nutmeg

  • Pinch of ground cloves

  • Pinch of ground cinnamon

  • 3 strips of orange peel

  • 1 strip of grapefruit peel

  • 6 oz of freshly brewed coffee (Kona is traditional)

  • ½ oz aged Jamaican rum

  • 1/2 oz 151 proof Demerara rum

  • To decorate: a cinnamon stick

Place the sugar, Coffee Grog mix, spices, and citrus peels in a preheated glass. Add the coffee and stir until the mixture is dissolved. In a flameproof ladle, pour the rums and light it with a match. Carefully pour the flamed rum into the drink (if you prefer, simply stir it without lighting it). Garnish with the cinnamon stick.

Don's Coffee Grog Batter:

Mix 1 oz of softened unsalted butter with 1 oz of honey, 1 tsp of your favorite vanilla syrup, 1/2 tsp of allspice, and 1 tsp of cinnamon syrup. Makes 18 servings.

Coffee Cocktail with Dark Moon Rum

  • 1½ cups cold brew coffee

  • ½ cup of coffee liqueur

  • ½ cup spiced rum

  • 1 12 oz bottle of Coca-Cola

  • ½ cup heavy cream

Combine the coffee, coffee liqueur, rum, and Coca-Cola in a large pitcher. Serve in glasses filled with ice and top with the cream, spreading it evenly.

Advance Preparation: The cold brew, coffee liqueur, and rum can be mixed up to 4 hours in advance. Keep covered until serving.

Coffee Cocktail with King Coffee Rum

  • 1½ oz aged rum (Castro recommends Flor de Caña)

  • ¾ oz concentrated vanilla syrup

  • 2 oz of stout beer

  • 2 oz of coffee

  • ¾ oz heavy cream

  • To decorate: a cookie (optional)

In a mixing glass, combine all ingredients except the heavy cream and stir. Pour into a mug, then add the heavy cream floating on top, slowly pouring it over the back of a spoon. Garnish with a cookie if desired.

Concentrated vanilla syrup:

Combine 1 cup of granulated sugar with 1/2 cup of water and 1 split vanilla bean in a saucepan over medium-high heat. Bring to a boil and stir until the sugar dissolves. Remove from heat, cool to room temperature, remove the vanilla bean, and transfer to a clean glass jar. Refrigerate and use within one month.
